Avena sativa, constitute a cool-weather crop that is grown in areas where warmer-weather crops have more difficulty. Before the oat can be used in food and feed applications, the outer husk, or hull, must be separated from the edible portion, or groat. After dehulling, the groat is often kilned to inactivate enzymes that could allow it to become rancid due to its high lipid content, which is approximately three times that of wheat.
